Ingredients
  • 4 Zucchini (medium)
  • ½ teaspoons Italian Seasoning (dried)
  • 1 pinch Salt (to taste)
  • 1 pinch Pepper (to taste)
  • 2 teaspoons Olive Oil
  • 16 ounces WORTHINGTON® Beef Crumble (thawed)
  • ½ cups White Onions (finely diced)
  • 1 teaspoon Garlic (minced)
  • ½ cups Ricotta Cheese (Tofutti – Better Than Ricotta Cheese)
  • 2 cups Marinara Sauce
  • ¾ cups Shredded Mozzarella Cheese (Violife plant based cheese for best melt)
  • 1 tablespoon Parsley (chopped)
  • Cooking Spray
Instructions
  1. Step 1
    Slice the zucchini in half long ways, shovel out the insides, drizzle with oil and sprinkle with Italian Seasoning, Salt and Pepper and and bake at 350 degrees till almost cooked.
  2. Step 2

    While that's baking, in a frying pan, brown beef crumbles with onions and garlic.

  3. Step 3

    Add marinara sauce and ricotta cheese to seasoned beef crumbles and stir well. Simmer until thoroughly heated.

  4. Step 4

    Once cooked scoop the sauce mixture into the zucchini boats and top with mozzarella cheese and bake til melted. Serve hot and enjoy.
