For the Sub:
- WORTHINGTON® Vegan Ham slices
- WORTHINGTON® Vegan Salami slices
- WORTHINGTON® Vegan Pepperoni slices
- Vegan cheese (your choice of variety, sliced – we used vegan Smoked Gouda!)
- Ciabatta bread (individual rolls or a large loaf, depending on the serving size)
For the Italian Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Additional:
- Vegan mayo
Vegetable Toppings:
- Sliced tomatoes
- Sliced red onions
- Sliced black olives
- Banana pepper rings
- Shredded lettuce
Instructions
- Prepare the Italian Dressing:
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, dried basil, salt, and pepper. Set aside.
- Prepare the Ciabatta Bread:
- Cut the ciabatta bread in half horizontally. If using a large loaf, you might want to cut it into smaller sandwich-size portions first.
- Assemble the Sub:
- Spread a generous layer of vegan mayo on the bottom half of the ciabatta bread.
- Layer shredded lettuce over the mayo.
- Arrange the WORTHINGTON® vegan ham, salami, and pepperoni slices over the mayo and lettuce.
- Add vegan cheese slices on top of the WORTHINGTON® deli meats.
- Layer on the sliced tomatoes, red onions, black olives, and banana pepper rings.
- Drizzle the Italian dressing over the toppings.
- Close and Serve:
- Place the top half of the ciabatta bread on and gently press down to compact the ingredients slightly.
- Cut into individual servings if you prepared a large loaf.

- Prep in Advance: Slice all your veggies beforehand and keep them refrigerated along with the WORTHINGTON® Vegan Deli Meats in separate containers. You can also pre-mix the Italian dressing.

- Serving: If serving at a gathering, consider cutting the subs into smaller, bite-sized portions, making them easier to handle and eat.
- Storage: If not serving immediately, you might want to wait to add the dressing and mayo until right before serving to prevent the bread from getting soggy.
