Ingredients

  • 1 package of WORTHINGTON® Vegan CHICKETTS™, prepared using your preferred method (either pressed and diced or pulled and diced – see notes at the bottom)
  • 2 tablespoons of sesame oil
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup snap peas
  • 2 carrots, julienned
  • 3 tablespoons soy sauce (or tamari for gluten-free option)
  • 2 tablespoons hoisin sauce (ensure it’s vegan)
  • 1 teaspoon chili paste (adjust according to heat preference)
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water
  • Cooked brown rice, for serving
  • Sesame seeds and sliced green onions, for garnish

Instructions

  • Prepare the Vegan CHICKETTS™: According to your preferred method, either dice and press the CHICKETTS™ or pull apart and dice. This helps in creating the perfect texture and enhances the sauce absorption.
  • Stir Fry the Vegetables:
    • Heat the sesame oil in a large skillet or wok over medium-high heat.
    • Add the onions, garlic, and ginger, sautéing until fragrant and slightly translucent, about 2 minutes.
    • Add the bell peppers, broccoli, snap peas, and carrots. Stir fry for about 5 minutes until the vegetables are tender but still crisp.
  • Cook the Vegan CHICKETTS™:
    • Add the prepared CHICKETTS™ to the skillet. Stir fry for another 5 minutes until the pieces are heated through and slightly browned.
  • Add the Sauces:
    • Pour in the soy sauce, hoisin sauce, and chili paste. Stir to combine all the ingredients well.
    • Add the cornstarch mixture to the skillet, stirring continuously. Cook for an additional 2-3 minutes until the sauce has thickened.
  • Serve:
    • Serve the stir fry over a bed of cooked brown rice. Garnish with sesame seeds and green onions.

Notes

Tips for Preparing CHICKETTS™:

  • Method 1: Diced & Pressed: Dice the CHICKETTS™ into bite-sized pieces. Lay them flat and use the flat side of a knife to gently press each piece. This helps to slightly separate the fibers, which allows them to better absorb flavors and mimics the mouthfeel of traditional chicken.
  • Method 2: Pulled & Diced: Gently pull the CHICKETTS™ apart into shreds before dicing. This method gives the pieces a more jagged, irregular edge that not only looks more authentic but also helps the sauce cling better to the vegan meat, enhancing both texture and flavor in every bite.
